Something that I know that my brother struggled with for years, before he finally opened his fine dining restaurant, was the menu. What did he want to serve people, because you don’t want to be wishy-washy about your menu. If you’re not one hundred percent behind your menu, you are going to end up serving dishes that aren’t worth serving. That is why both he and I would recommend to those of you that are looking to start your restaurant, that you make absolutely certain that you know what it is that you are going to be serving, because that can and will determine your success in your area.
